HOLIDAY CITRUS CAKE!

Here’s how to turn your cake terrarium into this super easy citrus cake! You’ll need a simple list of ingredients and equipment, that you can find bolded below.

  1. Preheat your oven to 350° F. Grease and flour a 9” cake pan (I prefer to use baker’s spray—which is cooking spray with flour in it—for this task, as it helps you get the cleanest release from your pan!).

  2. Carefully remove your toppers from the jar and set aside.

  3. Add the cake mix to a medium sized mixing bowl.

  4. Add 2 eggs, 6 tablespoons of vegetable oil, and 6 tablespoons of orange juice to the cake mix, whisking everything together until its completely smooth.

  5. Pour the cake mix into your prepared pan, and bake for 24-30 minutes, rotating halfway through for an even bake. You’ll know your cake is baked to perfection if, when you gently press on the center the cake bounces back, or a toothpick inserted in the center comes out clean.

  6. Let the cake cool in the pan for a 10 minutes, then gently flip out onto a wire rack to cool completely.

  7. Make the glaze by combining 2 cups of powdered sugar and 2-3 tablespoons of orange juice (if you’d like more thick, err on the side of less juice).

  8. Place the cake on a plate or cake stand, spread the glaze over the top, and immediately arrange your toppers on the wet glaze.

  9. Enjoy!
